It’s hard to properly convey what the meal was: but in short, 25 of us were treated to seven courses that reminded us all to reconsider our expectations about flavor and texture. Salmon re-emerged as a frozen mouse, cucumber became sorbet, beets became meringues filled with whipped camembert cheese, toasted hay became ice cream, sesame became a powder and spruce was set on fire, exclusively to create a complimentary essence.
